In the 18th century, sugar was sold in cones and then broken up into small pieces at home and stored in the sugar bowl. When the sugar bowl was passed around the table, the thumb could be placed under the wing to better stabalize the bowl and to allow the bowl to be held on the outside rather than the inside.
